Whey Protein for Gluten Free Diet
Whey protein isolate is a protein that is somewhat close in structure to the structure of the gluten proteins. Because of that, we’ve been experimenting with using it as a replacement in our recipes with spectacular results. Our pancakes are puffy, our breads are bouncier, and our cookies have substance. Not only that, but all of them are far less crumbly than they were before the addition of Whey Protein Isolate.
So far, we’ve experimented with several quantities of the protein and have found that adding 1/4 Cup of the Whey Protein Isolate per 3 Cups of Flour in the recipe. The protein that we use, NOW Whey Protein is very nearly flavorless and is marked as Gluten Free.
It comes in a 1lb or 5lb tub. The 5lb tub is only about $40 and should last quite some time depending on how much baking you do. We’ve been getting ours from Netrition (http://www.netrition.com) and they seem to have very good prices and quick shipping. They also allow you to set up recurring orders and order reminders so that you don’t run out.
