Walnut Fudge Brownie Pie

Ingredients:

  • 1 C Sugar
  • 2 Eggs
  • 1/2 C Margarine or butter
  • 1 tsp Vanilla
  • 2/3 C Gluten Free Flour
  • 1/3 C Cocoa
  • 1/4 tsp Salt
  • 1 C Chocolate Chips
  • 1/2 C Chopped Walnuts

Preheat oven to 350.  Grease Pan.  Beat eggs, stir in sugar, butter and vanilla.  Mix flour, cocoa, and salt.  Mix in wet mixture.  Spoon into pan then top with walnuts and chocolate chips.  Bake for 30 minutes.

Gurley’s Chocolate Chips as of July 25, 2007

From a conversation with the distributer of the chips, Gurley’s chocolate chips are gluten free.

Lays Stax chips as of July 21, 2007

From the Lays website:

Our LAY'S(r) STAX(r) chips (all flavors) are made on gluten free lines, thus all
LAY'S(r) STAX(r) products are free of gluten.

*The above products (Cheetos, Tostitos, Lay's potato chips, etc.) do not
contain gluten; however, they are produced on the same line as our products
that do contain gluten. Although the lines are washed between batches, a
slight residue may remain on the lines. Individuals who are extremely
sensitive may be affected.

If you’re sensitive to small amounts of gluten, you may experience a reaction to any of the chips besides the Stax.

Boars Head products as of July 17, 2007

Nearly all Dietz & Watson Meats are gluten free except: Rotisserie Style Chicken, Scrapple, Bockwurst, Fat Free Beef Franks, Gourmet Lite Franks, Gourmet Lite Beef Franks, Chicken Cordon Bleu, Chicken Florentine and Chicken Portabella. All the rest of our meat products are free of wheat, rye, barley, and oat proteins.

Note that the list is a list of items that are NOT gluten free.  Any other items are safe.

Carls Jr. or Hardees as of June 26, 2007

While unconfirmed with Carl’s Jr. or Hardees, responses from other Celiacs would indicate that the “Six Dollar Lettuce Wrap” or the “Low Carb Burger” is Gluten Free!   Responses are mixed for the fries, but the consensus says that if the fries are fried in a dedicated fryer, they are GF.

With many of the products here, it is always best to ask the personnel on hand to double check.  We all know what it feels like to eat Gluten by mistake!

Elizabeth’s Lemon Ice Cream Pie

Ingredients:

  • 1 Cup Almonds, Toasted
  • 2 Cups Gluten free Corn Flakes
  • 2 Tbs Brown Sugar
  • 1/4 Cup melted Butter
  • 1 Quart Vanilla Ice Cream
  • 6 Ounces Frozen Lemonade concentrate
  • Fresh or Frozen Raspberries (Optional)

Take ice cream out to soften. Coarsely chop the almonds. Combine Almonds, gluten free corn flakes, brown sugar and melted butter in a food processor. Process until the consistency of graham cracker crumbs. Press crust mixture into 8 or 9 inch pie pan. Set in freezer to set.

With a clean food processor, combine ice cream and lemonade concentrate until well blended. Spoon mixture into pie crust and put back in freezer until a few minutes before serving. Garnish with optional raspberries.

The nutritional Calculator is of particularly good use as you can pick from any item on their menu and it will give you not only the nutritional content like your used to on most packaging, but also the ingredients of each of the components of the item.  Very handy!

It’s also handy to remember that in many cases you can ask them to remove certain ingredients and still get the ice cream you love, just modified for a Celiac’s Gluten Free diet.

Chinese Sesame Chicken Bites

Ingredients:

  • 3 tbs Brown Sugar, Packed
  • 2 tbs Gluten Free Soy Sauce
  • 1 tbs Minced Ginger (sub 1/4 ground)
  • 1 Clove Minced Garlic
  • 2 Chicken Breasts, Cubed
  • 1 tbs Oil
  • dash Sesame Oil
  • Diced Scallions (Optional, to taste)
  • Coarsely Chopped Peanuts (Optional, to taste)
  • Sesame Seeds (to taste)

Instructions:

Combine brown sugar, soy sauce, sesame oil, and ginger in bowl and set aside. Heat oil in heavy skillet. Add garlic and chicken. Saute over high heat for 3 minutes or until chicken is about half cooked. Give the soy sauce a little extra mix to recombine and then add to chicken. Saute until most of the liquid has evaporated and the chicken has a nice glaze. (approximately 4 minutes) Remove from heat. Sprinkle with peanuts, scallions, and sesame seeds.
